I love the fluffiness of Japanese Cheesecake. From my personal interest last weekend I tried the most famous Uncle Tetsu Cheesecake Recipe in my kitchen.

- 50 grams of butter
- 5 egg yolks
- 125 milliliters of milk
- 1 tablespoon of lemon juice
- 70 grams of flour
- 30 grams of corn flour
- 5 egg whites
- ½ cup of caster sugar

Instructions about How I Made Uncle Tetsu Cheesecake
1. Melt 200g cream cheese, 50g butter, and 125ml milk together in a pot on low heat.
2. Prepare Your Oven at 150°C and Put a dripping pan on the lowest oven rack.
3. In a bowl, beat 5 large egg whites with 100g caster sugar until soft peaks form.
4. In a Separate Bowl, Beat 5 egg yolks until they’re creamy. And, pour in the melted cheese mixture.
5. Add 70g flour and 30g corn flour (or tapioca flour). Mix it all together.
6. Gently fold a portion of the egg white mixture into the yolk mixture until it becomes creamy.
7. Slowly fold in the rest of the egg whites until there are no white lumps.
8. Pour the batter into a 15 cm cake pan with baking paper. Place it on the dripping pan in the oven.
9. Pour a bit of water into the dripping pan. Bake for an hour at 150°C (302°F).
10. After baking, let the cake cool. Then Serve.
Your cheesecake should be light in color and not shrink. Enjoy!!
